Banana Bread with Caramel Flavour

Cooking time: 60 minutes

Ingredients:

  • 2 eggs
  • 180 g (3/4 cup + 1 Tbsp) soft unsalted butter (room temperature)
  • 3 – 4 ripe bananas  (~355 g)
  • 220 g (1 cup + 1/4 cup + 2 Tbsp) all-purpose flour
  • 75 g (1/4 cup + 2 Tbsp) coconut sugar
  • 80 g (3/4 cup) chopped walnuts
  • 1 tsp vanilla powder
  • 1/2 tsp salt
  • 1 tsp baking soda

Directions:

  1. Use a hand mixer. Whisk the cane sugar and soft butter until fluffy.
  2. Add eggs one at a time. Beat the mixture well until smooth.
  3. Add very ripe bananas and beat well.
  4. Add flour in several rounds.
  5. Add baking soda, vanilla powder and salt.
  6. Chop the nuts with a knife to the desired size and add to the dough. Stir.
  7. Grease a baking dish with unsalted butter and place the dough in the baking dish.
  8. Bake for 45 – 50 minutes at 180°C (355°F). Let the cake cool completely for 2-3 hours, then it will taste much better.
