Blue Blackberry Overnight Oats

I love overnight oats, it gives me a charge for the whole day! And to make this a complete meal, add a handful of sweet berries or chopped fruits, like bananas or apples, to the top.

Fridge time: 7 – 9 hours
Yield: 1 serving

Ingredients:

  • 55 g (1/2 cup) old-fashioned rolled oats
  • 105 mL (1/4 cup + 3 Tbsp) milk
  • 75 g (~1/4 cup) yogurt
  • 1 tsp chia seeds
  • 75 g (1/2 cup) frozen blackberries
  • 1/2 fresh banana
  • 1 g blue matcha

Optional toppings:

  • Blueberry
  • Chopped toasted almonds
  • Sliced Banana
  • Chocolate shavings or glaze
  • Coconut flakes

Directions:

  1. Combine oats, milk, yogurt, chia seeds and blue matcha together in a jar or container, and let sit overnight or at least 2 hours in the fridge.
  2. Simmer frozen blackberries in a small saucepan. When it becomes soft and begins to ooze, crush it with a fork or pusher. It takes about 10 – 15 minutes, maybe less.
  3. The next morning, top with desired toppings.

Notes:

  • Keep in an air-tight container or jar in the fridge for up to 2 days.
  • You can use your favourite milk and yogurt, plant-based or low-lactose, its up to your preferences.
