Chocolate Cake (Pele Cake)

The cake is called “Pele”, probably in honor of the famous football player. The cake is easy and quick to prepare. The cakes layers are not dry, and the cream with boiled condensed milk is just a great combination! Your whole family will love the cake! 

I used a 18 cm diameter baking dish. If you use a baking dish with 18-21cm diameter, you will need more cream. Double the serving of cream frosting.

Ingredients:

Puffs:

  • 3 eggs
  • 375 g (1 cup + 3/4 cup) white sugar
  • 50 g (3 Tbsp + 2 tsp) butter
  • 375 g (~12,4 oz) kefir
  • 12 g ( 1 tsp + 3/4 tsp) baking soda
  • 25 mL (1 Tbsp + 2 tsp) wine vinegar
  • 35 g (1/3 cup) cocoa powder
  • 340 g (2 cups + 2 Tbsp) wheat flour

Cream frosting:

  • 300 g (1 cup + 1/4 cup + 2 Tbsp) soft unsalted butter
  • 330 g (11,6 oz) boiled condensed milk

Directions:

  1.  Beat eggs and sugar with a mixer until white and fluffy.
  2. Whisk the cocoa, melted butter and kefir.
  3. Stir the baking soda with vinegar and add to the mixture.
  4. Add flour in parts and add salt. Mix the dough well.
  5. You will have 1260 grams of dough. We divide it in half, it turns out 630 grams and bake in 2 approaches. Bake for 40 – 45 minutes at 180℃ (355℉). Pre-grease the baking dish with unsalted butter. I used a 18 cm diameter baking dish.
  6. Once the cakes are baked, remove from the mold, turn over and leave to cool for at least 30 minutes.
  7. Take a sharp knife and cotton thread. Use a knife to make cuts, each cake should be about 1 cm – 1,5 cm. Make sure that all cake puffs are even. In the video, I showed how to cut single cakes with a cotton thread.
  8. For the cream, whisk soft butter with boiled condensed milk, beat until the cream becomes airy and turns white.
  9. Collect the cake: cake-cream-cake-cream.
  10. Remove the pulp from the tops of the baked biscuit, this will be needed for sprinkling and decorating the cake.

Notes:

  • All ingredients should be at room temperature.
  • It would be very nice if the cake is left in the refrigerator overnight, do not forget to just cover it with food wrap.
  • I made a mistake in the video by indicating the wrong proportions of the cream. The recipe contains the correct ingredients.
