Cottage Cheese Pancakes with Vanilla

Cooking time: 20 minutes

Ingredients:

  • 255 g (~9 oz) (9%) cottage cheese
  • 220 g (~7,7 oz) (5%) cottage cheese
  • 3 Tbsp vegetable oil for frying
  • 1 tsp vanilla powder/extract
  • 3 Tbsp all-purpose flour
  • 2 Tbsp semolina
  • 1 Tbsp sugar
  • 2 eggs
  • 1 tsp salt

Directions:

  1. In a large bowl, combine all ingredients until smooth and let sit for 5 minutes. For a softer and more delicate texture, use a hand blender.
  2. Heat olive oil in a skillet and fry the cottage cheese pancakes on each side for 5 minutes until golden brown.
  3. After you fry the cottage cheese pancakes on both sides, turn them over one more time and fry for 2-3 minutes.
  4. Place the the cottage cheese pancakes on a plate with paper napkins to allow the glass to excess oil. Sprinkle the cottage cheese pancakes with powdered sugar and serve with sour cream, honey, jam! With anything! Everything will be delicious!

Notes:

  • You can use cottage cheese of any percentage of fat, for example, 5% and 0%, 9% and 0%, 5% and 5%. It is important to remember: if the cottage cheese is very fat, then the cottage cheese pancakes will be cut in a frying pan and you will not be able to form a ball.
