Oatmeal Cookies – Anzac Biscuits

Total time: 37 minutes
Servings: 10-14 cookies


  • 150 g unsalted butter, melted
  • 150 g all-purpose flour
  • 40 g white sugar + 40 g muscovado sugar (or 80 g brown sugar)
  • 180 g quick oats (or old-fashioned oats)
  • 4 Tbsp warm water
  • 1/2 tsp baking powder
  • 1/3 tsp salt


  1. In a small saucepan, melt the butter and the sugar. If you use muscovado sugar, it will separate from the butter. Don’t worry, keep stirring with a spatula or whisk until the mixture is smooth.
  2. In a large bowl, combine all dry ingredients and whisk together. Add melted butter with sugar, warm water and mix well.
  3. The cookie dough will be very moist. Shape the cookies into the desired shape and bake for 30 minutes at 160°C (320°F) or until lightly golden.


  • You can use only white sugar.
  • I advise using muscovado sugar or brown sugar, it gives a caramel taste and an amazing flavor!
