Peanut Butter Overnight Oats

I love overnight oats, it gives me a charge for the whole day! This simple recipe is full of flavour and perfect for a breakfast. Prepare this recipe the night before and enjoy in the morning!

Prep time: 10 minutes
Fridge time: 7 – 9 hours
Yield: 1 serving

Ingredients:

  • 55 g (1/2 cup) old-fashioned rolled oats
  • 105 mL (1/4 cup + 3 Tbsp) milk
  • 75 g (~1/4 cup) yogurt
  • 1 tsp chia seeds
  • 1 Tbsp peanut butter
  • 1/2 fresh banana
  • 1/2 Tbsp natural sweetener
  • 1 kiwi

Optional toppings:

  • Blueberry
  • Chopped toasted almonds
  • Strawberries
  • Coconut flakes

Directions:

  1. Combine oats, milk, yogurt, sliced banana, chia seeds and peanut butter together in a jar or container, and let sit overnight or at least 2 hours in the fridge.
  2. The next morning, top with kiwi and other desired toppings.

Notes:

  • Keep in an air-tight container or jar in the fridge for up to 2 days.
  • You can use your favourite milk and yogurt, plant-based or low-lactose, its up to your preferences.
