Ricotta Pancakes with Honey

Prep Time: 10 minutes
Cook Time: 15 minutes
Servings: 9-11 pancakes

Ingredients:

  • 210 g (1 and 1/2 cups) all-purpose flour, sifted
  • 50 g (1/4 cup) caster sugar or granulated sugar, or 25 g muscovado and 25 g white sugar
  • 180 mL (3/4 cup) whole warm milk
  • 190 g (3/4 cup) full fat ricotta (35-45% fat)
  • 2 large eggs
  • 2 tsp baking powder
  • 2 pinches of salt

Directions:

  1. In a large mixing bowl, whisk eggs with sugar until full incorporated. Add ricotta cheese and whisk.
  2. Add flour, baking powder, salt and warm milk, and whisk to combine. Batter should be thick and smooth.
  3. Place a medium-sized non-stick frying pan on low-medium heat. Add approximately 2-3 tablespoons of pancake batter to the middle of the pan.
  4. Fry pancake until golden. Flip and cook on the other side until lightly golden. Serve warm with fresh berries and honey/maple syrup.
