Tomato and Feta Cheese Galette



  • 115 g (4 oz) cold unsalted butter
  • 170 g (1 cup + 1 Tbsp) wheat flour
  • 62,5 g (1/4 cup) ice water
  • 300 g (10,5 oz) tomato
  • 200 g (7 oz) feta cheese
  • A pinch of salt


  1. Cut the cold butter and mix lightly with the flour.
  2. Add ice water and stir again slightly to combine water with flour.
  3. Fold and roll out the dough 3 – 4 times. Refrigerate for 4 hours or overnight.
  4. Then take out the dough and divide it into 2 parts. Roll out one part and send the other to the refrigerator.
  5. For the filling, cut the tomatoes and feta cheese into squares.
  6. Put the feta on the rolled dough first and then the tomatoes. Sprinkle with dried basil.
  7. Drizzle with olive oil and brush with beaten egg.
  8. Bake 35 minutes at 175℃ (347°F).
