Vegan Dark Chocolate Granola with Coconut Chips

Ingredients:

  • 360 g (4 cups) oatmeal flakes
  • 80 g (1/4 cup + 3 Tbsp) dark chocolate chips (or chopped)
  • 70 g (3/4 cup) almonds
  • 140 mL (1/2 cup + 1 Tbsp) almond milk
  • 30 g (2 Tbsp + 1 tsp) coconut oil
  • 30 g (1 Tbsp + 2 tsp) marple syrop
  • 30 g (2 Tbsp + 2 tsp) coconut flakes
  • 30 g (3 Tbsp + 1 tsp) dried cranberry
  • 25 g (2 Tbsp + 2 tsp) coconut chips
  • 10 g (1 Tbsp) pumpkin seeds

Directions:

  1. In a large bowl, combine all ingredients except chocolate.
  2. Pour granola in to a baking sheet with parchment. distribute evenly and bake for 30 minutes 180°C (355℉). Stir the granola every 10 minutes to ensure even baking.
  3. Put the finished granola into a bowl and add the chopped chocolate or chocolate chips, mix well. The chocolate will begin to melt.
  4. Once the granola has cooled, transfer to a container or glass jar for storage.
