Banana Mug Cake

This moist banana cake comes together fast to make a fantastic bite to go with your afternoon coffee or make it in the morning while you’re waiting for the coffee to brew.

  • 1 ripe banana, mashed
  • 1 egg
  • 1 Tbsp coconut sugar
  • 55 g (¼ cup) unsalted butter, melted
  • 55 g (½ cup) all-purpose flour
  • 1/3 tsp baking powder
  • Pinch of salt


  1. In a medium bowl, mix together the banana, egg, brown sugar, granulated sugar, and butter until smooth.
  2. Add the flour, and stir just until smooth.
  3. Divide the dough cake between 2 mugs, being careful not to fill the mugs more than half full.
  4. Microwave each cake for about 1 minute and 30 seconds, or until the top is firm but springy when lightly touched, and serve.
