Chocolate Cake with Caramel – No Flour, No Baking

Ingredients:

Crust (shell):
  • 2 large eggs
  • 2 ripe bananas
  • 4 Tbsp cacao powder, unsweetened
  • 3/4 tsp baking powder (~3 g)
  • 1/3 tsp salt (~1 g)
Caramel:
  • 50 g sugar
  • 85 g heavy cream (warm, 32-35% of fat)
Cream Cheese Frosting:
  • 150 g cream cheese
  • 1 Tbsp sugar (use coconut sugar, it gives caramel flavour)
  • 2 Tbsp heavy cream (32-35% of fat)

Directions:

  1. First of all, I make cake crust (shell). It takes about 20 minutes to make (usually I put them in the fridge covered with cling film to speed up the cooling process). In a blender, combine bananas, eggs, cocoa powder, salt and baking powder. Blend until smooth.
  2. Secondly, The Caramel (it takes about 3-5 minutes). In a small saucepan over low heat, melt the sugar until small bubbles appear. Then add hot cream in small portions and stir constantly until smooth. Pour the finished caramel into a small bowl and cover with plastic wrap. Let cool completely.
  3. And the last is Cream Cheese Frosting (about 2-3 minutes). Whisk cold cream cheese with cane sugar until fluffy and smooth.
