French Sable Cookies (Breton Cookies)

My parents brought me a present from Paris and it was the most beautiful box of cookies in my life! And the cookies were amazing! I could not tear myself away from them. And when they ended, I was very upset but decided that I needed to learn how to do the same!

Try to make these cookies and you will be transported to the streets of Paris with a cup of coffee and delicious Sable Cookies in hand.

Prep time: 25 minutes
Fridge time: 30 minutes
Baking time: 13 minutes
Total time: 68 minutes

Ingredients:

  • 4 egg yolks
  • 180 g (3/4 cup + 1 Tbsp) white sugar
  • 300 g (1 cup + 1/4 cup + 2 Tbsp) unsalted butter (room temperature)
  • 390 g ( 2 cups + 1/4 cup + 3 Tbsp) wheat flour
  • 1/2 tsp baking powder

Instructions:

  1. Separate the egg whites from the egg yolks.
  2. Beat the yolks with sugar until white and fluffy. This will take approximately 2 – 4 minutes. Depends on the speed of the mixer.
  3. Add room temperature butter to the beaten yolks. Beat for 10 – 12 minutes until the mixture turns white.
  4. Add flour and gently knead the dough. It is very important not to over knead the dough.
  5. Place the dough in the fridge for at least 30 minutes. Then take out the dough and roll it out to 2 – 3 mm . Take any cookie cutter and cut out each cookie.
  6. Bake cookies in a preheated oven to 180°C for 13 minutes. You can sprinkle the cookies with sugar before baking. Enjoy!
