Garlic and Cheese Mashed Potatoes

Prep time: 10 minutes
Cooking time: 50 minutes
Total time: 60 minutes

Ingredients:

  • 1 kg (2,2 pounds) potatoes
  • 136 mL (1/2 cup + 1 Tbsp) hot milk, or more
  • 64 g (2,2 oz) unsalted butter
  • 55 mL (3 Tbsp + 2 tsp) heavy cream
  • 10 cloves fresh garlic
  • 1 tsp salt
  • 2 springs of coriander and fresh parsley

Directions:

  1. Peel and cut potatoes in half. Remove any spots, lumps or knots.
  2. Place potatoes in a large pot and cover with cold water, add salt. Bring to a boil, reduce heat down to medium-low and allow to simmer (about 25 – 35 minutes).
  3. Melt butter in a skillet, add garlic and simmer for 3 minutes over low heat to caramelise.
  4. Add cream and milk, boil for 5 minutes. Set aside and keep warm.
  5. Drain cooked potatoes and add sauce. Mash the potatoes with a potato masher until smooth.
  6. Add mozzarella cheese if desired and stir well.
  7. Sprinkle with chopped green onions and coriander.
