Georgian Cheese Bread (Khachapuri)

I really miss traveling. Every year my family and I go to Georgia to go snowboarding. And every year I dream of going to Georgia to eat their national dishes. I love Georgia very much, I love Georgians people, they are such sincere and kind people. My longing for Georgia began with Khachapuri.

Prep time: 1 hour
Baking time: 45 minutes

Ingredients:

  • 100 mL (1/4 cup + 3 Tbsp) warm milk
  • 50 mL (3 Tbsp + 1 tsp) warm water
  • 225 g (1 cup + 1/4 cup + 2 Tbsp) wheat flour
  • 20 mL (1 tbsp + 1 tsp) olive oil
  • 1 Tbsp white sugar
  • 1/2 tsp dry yeast
  • 1/2 tsp salt
  • 1 small egg

Filling:

  • 320 g (1 1/2 cups) mozzarella cheese (or homemade cheese)
  • 200 g (2 cups) feta cheese

Directions:

  1. In a large bowl, combine warm milk, warm water, sugar and dry yeast. Mix well.
  2. Add olive oil, flour and salt. Knead the dough. Cover the bowl with plastic wrap or a towel. Leave in a warm place for at least 1 hour to rise.
  3. In a large bowl, grate the cheese.
  4. After an 1 hour, roll out the dough in a circle.
  5. Preheat oven to 180°C (355°F).
  6. Set aside 100 grams of cheese to sprinkle on top. Place the cheese in the center of the dough and use the sticks to collect the dough into a bag as shown in the video. Roll out the dough to the same thickness. Transfer the cheese bread (Khachapuri) to the baking parchment.
  7. Crack one egg on top and brush over cheese bread (Khachapuri). Sprinkle 100 grams of cheese on top.
  8. Bake for 45 minutes at 180°C (355°F).
