Homemade Beef Burgers from Scratch


The burgers are very juicy! In the video recipe, I wrote 1,200 kilograms(2,6 pounds) of minced meat from marbled meat. From this amount of meat, you will get 8 patties (150 grams each).

Cooking time of buns: 1 hour 30 minutes
Cooking time of burgers: 30 minutes


For 8 patties:

  • 1,200 kg minced meat (2,6 pounds)
  • 1 tsp black ground pepper
  • 2 tsp salt or more

For 8 buns:

  • 300 mL (1 cup + 1/4 cup) warm water
  • 55 mL warm milk (3 Tbsp + 2 tsp)
  • 3 eggs
  • 10 g (3 tsp + 1/2 tsp) dry yeast
  • 1 Tbsp white sugar
  • 53 g (3 Tbsp + 2 tsp) unsalted butter
  • 700 g (4 cups + 1/4 cup + 2 Tbsp) wheat all-purpose flour
  • 30 g (2 Tbsp + 1 tsp) white sugar
  • 3 g (1/2 tsp) salt
  • White and black sesame seeds

Burgers filling for 2:

  • Edam and cheddar cheese
  • 2 small red onion
  • 1 tomato
  • 2 romano leaves
  • 1 Tbsp olive oil
  • 2 Tbsp mayonnaise
  • 1 tsp French mustard
  • 1 tsp BBQ sauce
  • 2 medium pickled cucumbers


  1. Each patty must be beaten against the board as shown in the video.
  2. For buns: pour yeast and 1 Tablespoon of sugar into warm water and stir. Leave it on for 10 minutes.
  3. In a another bowl, melt the butter and milk. Once the mixture has cooled, add it to the yeast bowl. Mix well.
  4. Add salt, sugar, flour and eggs. Start kneading the dough. (Leave half of the third egg for greasing the buns).
  5. Knead the dough on a floured table. Place the dough in a bowl and cover with plastic wrap. Leave in a warm place for 1 – 1,5 hours.
  6. Once the dough has doubled, knead the dough and form into buns. Each bun is from 120 grams to 150 grams. The bun can be made smaller – 100 grams.
  7. Leave the buns for 1 hour to double in size. Grease the buns with a beaten egg, sprinkle with sesame seeds and bake in a preheated oven to 200℃ (392°F) for 11 – 15 minutes. Let them cool down.
  8. Prepare the filling for burgers: cut 1 onion into half-shells, it will need to be fried in 1 Tablespoon of olive oil for 5 minutes. And cut the second onion into rings. Cut the tomato and pickled cucumber into rings too.
  9. For the sauce, combine mayonnaise with mustard and barbecue sauce.
  10. Fry the patties (сutlets) until the desired doneness.
  11. Collect your burger and enjoy your meal!
