Incredible Homemade Calzone

Prep Time: 15 minutes
Proof Time: 4 hours
Bake Time: 15-20 minutes
Servings: 2 calzones

  • 125 g all-purpose flour (type 00, 10-11% protein)
  • 50 g durum flour (semilona)
  • 75 g high-protein flour (13-14% protein)
  • 200 mL warm water
  • 5 g salt
  • 8 g dry active yeast
  • 250 g sliced ham (pick your favourite ham)
  • 150 g mozarella cheese
  • 100 g tomato puree
  • Olives
  • Dried basil
  • Parmigiano cheese

  1. To make the crust: Weigh all flour. In the large bowl, combine all of the ingredients, and mix and knead — using your hands, a mixer, or a bread machine set on the dough setting — to make a soft, smooth dough.
  2. Place the dough in a lightly greased bowl, cover it, and let it rise in the warm place for at least 3 hours.
  3. After 3 hours, gently knead the dough and divide it into 2 equal bowls. Cover it, and let rest for about 1 hour.
  4. Working with one half at a time, place the dough on a piece of parchment, or onto a lightly greased baking sheet.
  5. Feel free to use your own favorite filling. Add 2-3 Tbsp tomato puree, dried basil inside and outside to the calzone. Sprinkle with parmigiana cheese.
  6. Preheat the oven to 225°C (435°F). Bake the calzone for 15 to 20 minutes, until they’re golden brown.
