To make the crust: Weigh all flour. In the large bowl, combine all of the ingredients, and mix and knead — using your hands, a mixer, or a bread machine set on the dough setting — to make a soft, smooth dough.
Place the dough in a lightly greased bowl, cover it, and let it rise in the warm place for at least 3 hours.
After 3 hours, gently knead the dough and divide it into 2 equal bowls. Cover it, and let rest for about 1 hour.
Working with one half at a time, place the dough on a piece of parchment, or onto a lightly greased baking sheet.
Feel free to use your own favorite filling. Add 2-3 Tbsp tomato puree, dried basil inside and outside to the calzone. Sprinkle with parmigiana cheese.
Preheat the oven to 225°C (435°F). Bake the calzone for 15 to 20 minutes, until they’re golden brown.
