One-Bowl Healthy Oatmeal Cookies

Cooking time: 30 min

Ingredients:

  • 150 g (1 1/2 cups+2,5 Tbsp) oat flakes
  • 90 g (3/4 cup+2 Tbsp) oat flour
  • 35 g (1/4 cup) rice flour
  • 55 g (1/4 cup) unsalted vegan butter (soft) or regular butter
  • 2 ripe bananas
  • 2 Tbsp hot water
  • 1 Tbsp dried ginger powder
  • 1 Tbsp coconut oil
  • 1 tsp cinnamon powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • Coconut flakes (optional)

Directions:

  1. Preheat oven to 160℃.
  2. In a large bowl, combine oat flakes, oat flour, rice flour, all spices, salt, and baking powder. Mix well.
  3. Add chilled soft butter, 2 ripe bananas and 2 tablespoons of hot water to the resulting dry mixture. Mix by hand until smooth and form into cookies.
  4. Place the cookies on baking paper and bake for 15-20 minutes on convection until golden brown. (Sprinkle with coconut flakes on top, if you want)

Notes:

If you are not vegan or vegetarian, you can use regular butter. You can also brush the cookies with a beaten egg.
