In a medium bowl, mix warm water, yeast, salt and sugar until all ingredients are totally dissolved.
Start adding flour in small portions, the dough will be soft. Leave the dough in a warm place for 10 minutes. After 10 minutes, punch down the dough, form into a ball and leave for 1 hour in a warm place until the dough has doubled in size.
Divide the dough into 6 equal portions using a metal dough scraper or knife. Make the balls with your hands. Cover and let rest for 10 minutes.
Preheat the oven to 240°C (475°F) and place a roasting pan on the middle rack to preheat.
Using a rolling pin, roll out each ball. Cover and let rise for 10 minutes.
After last resting, dust the pita with flour and place on the preheated roasting pan in the oven. Bake until puffed up! Don’t over baked it. Its takes about 3-5 minutes. Let the pita breads to cool slightly on a wire rack. Store in a food bag, so that they don’t dry out.
