Soft Apple Cake with Cinnamon

Baking time: 55 minutes
Total time: 70 minutes


  • 3 eggs
  • 4 small apples
  • 220 g (1 cup + 1/4 cup + 2 Tbsp) wheat flour
  • 180 g (3/4 cup + 1 Tbsp) unsalted butter (room temperature)
  • 140 g (1/2 cup + 3 Tbsp) caster sugar 
  • 120 ml warm milk (1/2 cup)
  • 1/2 tsp сinnamon powder
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt


  1. Preheat oven to 165°C.
  2. Cut the apples into thin slices, removing the seeds in advance.
  3. Place the butter, caster sugar and 1/2 tsp of the cinnamon in the bowl of an electric mixer and beat for 5 – 6 minutes or until light and creamy.
  4. Gradually add the eggs, one at a time, beating well after each addition.
  5. Add the flour with baking powder, salt and milk, and mix to combine.
  6. Bake in a 20 – 22 cm diameter pan with non-stick baking paper and lightly grease the sides with butter.
  7. Place in the oven and cook for 50 – 55 minutes.
  8. Sprinkle with icing sugar to serve and enjoy!
