Soft Fluffy Rice Pancakes

Soft, fluffy and airy rice pancakes are easy to make and perfect who care about health. As a topping, I always use some sugar-free jam, fruits, berries and sometimes maple syrup.

Yield: 2 servings

Ingredients:

  • 155 mL (1/2 cup + 2 Tbsp) milk
  • 145 g (1 cup + 7 Tbsp) rice flour
  • 2 eggs ( ~70 g egg whites and ~38 g egg yolks)
  • 1/2 Tbsp lemon juice
  • 1 pinch of salt

Optional toppings:

  • Yogurt
  • Berries
  • Nuts
  • Natural sweetener (maple or apple)

Directions:

  1. In a medium bowl, whisk egg whites with lemon juice until firm hard peaks.
  2. In another bowl, combine the yolks, milk and gradually add rice flour.
  3. Gradually add the beaten egg whites to the yolks and stir with a spatula or whisk. Do this gently to keep the pancakes fluffy. DO NOT over-mix.
  4. Preheat the skillet. Fry the pancake on each side for 1,5 minutes (medium heat). Add 1 Tbsp water, cover with a lid (you can grease the skillet with oil)
