Thin Breakfast Crepes


These are my favourite pancakes, I really love them! What’s the secret? Firstly, you need to prepare a thick dough and then add boiling water. If the dough seems thick to you and the pancakes are thick, then add some milk.


  • 2 eggs
  • 210 g (1 cup + 1/4 cup + 1 Tbsp) wheat all-purpose flour
  • 260 mL (1 cup + 1 Tbsp) warm milk
  • 440 mL (1 cup + 3/4 cup + 1 Tbsp) boiling water
  • 2 Tbsp white sugar
  • 2 Tbsp vegetable oil
  • 1 tsp baking soda
  • 1 tsp lemon juice
  • 1 tsp salt
  • Unsalted butter for greasing crepes (optional)


  1. Eggs, sugar and salt beat together until white foam (you can use hand mixer).
  2. Add flour and milk in parts, mix well.
  3. Stir the baking soda with lemon juice, add to the dough, mix well.
  4. Add boiling water to the dough and stir very well.
  5. Add vegetable oil and mix.
  6. Leave the dough for 15 minutes.
  7. Bake in a very hot frying pan. You can grease each pancake with unsalted butter.
